Vegan Fudge

I've had a chocolate habit for quite some time! When I started cutting out ingredients like sugar, soy, high fructose corn syrup it was hard to find chocolate I could eat. One night I had a chocolate craving and I started getting creative. I realized how really simple it is to make chocolate and much healthier! I am also sensitive to caffeine in cacao that is much stronger in dark chocolate so I started using carob powder. I love it! It has a natural sweetness to it where you can use less sweetener. You can skip the carob and use more cacao powder if you prefer. You will have to add more sweetener with cacao. I add cacao nibs because I just love them and the crunch! These are so quick to make. The chilling is important, it binds it better to create a fudge like consistency.

Makes 6-7, Double recipe for more.

Ingredients:

2 tbsp coconut oil melted

1 c almond flour

¼ c carob powder

¼ c cocoa powder

2 tbsp maple syrup

1 tbsp cacao nibs (optional)

cinnamon to sprinkle (optional)

1. Mix all ingredients together in a medium sized bowl.

2. Spoon out mixture and roll into 1 in. balls. Sprinkle a little cinnamon on tops if desired.

3. Lay on parchment paper. Refrigerate for one hour.
